The sea connects us all. As we journey along the world’s most remote coastlines, we explore the culture, cuisine, and communities shaped by life at the edge of the ocean.
On the Faroe Islands, we had the privilege of visiting PAZ, a 2-star Michelin restaurant in Tórshavn led by acclaimed Chef Poul Andrias Ziska. What began as an unplanned dinner quickly turned into something far more meaningful.
The following day, Chef Poul invited us behind the scenes of PAZ, sharing his connection to the Faroese landscape, his culinary philosophy, and the profound role the sea plays in his work.
PAZ is a tribute to the raw beauty of the islands: over 80% of its ingredients come from local waters, traditional techniques like ræst add depth and heritage, and every dish carries the story of the sea.
